Sunday Supper Series: Instant Pot Smoky Honey Cilantro Chicken

With four kids who are ALWAYS hungry, dinner time is not my favorite.  There are few things that send me over the edge more than after a crazy day of work, carpooling, laundry and cleaning to have my kids say "What is for dinner?" when I am not well prepared for it.  I am hit or miss on the weekdays (I mean, we always eat...but some days it is grilled cheese or fried egg sandwiches), but Sunday I actually love cooking a nice, well-rounded meal.  It might be the only day I actually sort of enjoy cooking.  Maybe it is the slower pace of Sunday, or maybe it is because going to church puts me in a more generous mood. 

I am going to try and post the recipe we use for dinner each Sunday (with links to the source where appropriate, b/c I am more of a follower of great recipes, than a creator of great recipes).  I have a few food bloggers that I pretty much worship, so you might see a lot from blogs like Mel's Kitchen Cafe, Our Best Bites, Pinch of Yum and The Girl Who Ate Everything

Today's recipe is a tried and true family favorite from Mel's Kitchen Cafe.  If you have not been to her website for recipes, I HIGHLY recommend that you do that ASAP!  One of my fave food bloggers of all time.  I usually put this honey cilantro chicken on a salad for me, but the kids love it as a taco or rice bowl.  

Also, I can't say enough how much I absolutely adore my instant pot.  I do not know how I survived life before the instant pot! This link goes to the exact one I purchased from Amazon...look at all of those great reviews if you don't believe me on this!

INSTANT POT SMOKY HONEY CILANTRO CHICKEN

PREP TIME: 10 MINS

COOK TIME: 12 MINS

INGREDIENTS:

1 cup salsa verde (tomatillo salsa)

1/4 cup honey

1 tablespoon liquid smoke (optional, but delicious)

2 teaspoons chili powder

1 teaspoon salt

1 teaspoon dried oregano

1 teaspoon cumin

1 teaspoon garlic powder or 2-3 cloves, finely minced

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/2 cup chopped fresh cilantro

2-3 pounds boneless, skinless chicken breasts (about 3-4 chicken breasts, more if using thin cut)
