Sunday Supper Series: Chipotle Lime Chicken Tacos

Another one of my favorite food bloggers is Leigh Anne from Home Based Mom.  She is an incredibly talented woman with a gift for food, home decor, family, entertaining and fun.  I have followed her for years and I am a better cook, photographer, and hostess for it! 

These chicken chipotle tacos not only look beautiful, but taste amazing. 

You marinade the chicken ahead of time; but other than that, putting the meal together takes 20 minutes or less.  This is a go to meal for my family, though we go way easy on the canned chipotle chiles (1 can is good for our wimpy-about-spicy-stuff family).

Servings: 4 -6 servings

  • 4 cloves garlic minced
  • 2-4 canned chipotle chiles depending on heat level
  • 4 Tbsp packed brown sugar
  • 1 Tbsp kosher salt
  • 2 tsp chile powder
  • 1 lime zested and juiced
  • 1/4 C vegetable oil
  • 2 - 2 1/2 lbs. boneless skinless chicken thighs
  • 1/4 C chopped fresh cilantro


  • lettuce
  • onions
  • cilantro
  • avocado
  • corn tortillas


  1. In a blender mix together garlic, chiles, sugar, salt, chile powder, lime zest, lime juice and oil.

  2. Blend until smooth.

  3. Place in a plastic bag with chicken and seal. Marinade for 8-14 hours in refrigerator.

  4. Place rack in oven 5 inches below broiler and preheat.

  5. Place chicken on a broiler pan or metal baking rack.

  6. Broil until chicken is well browned, 5-7 minutes.

  7. Flip chicken and brown second side for about 5 minutes.

  8. Allow meat to sit for 5 minutes.

  9. Slice meat and serve with toppings on tortilla.
