This is one of my family's favorite meals and it is super versatile and oh, so easy to prep. A new favorite food blogger I follow is Chelsea from Chelsea's Messy Apron and she isn't just awesome because she has the best name EVER ;). She has incredible photography, super yummy and healthy recipes, and I have yet to be disappointed in any of the recipes I have used from her website. Sunday dinner this week is from her One Pan Healthy Italian Sausage & Veggie recipe, however I didn't have all of the ingredients on hand when I originally found this recipe and the rest is history. I make some variation of her recipe for dinner all the time!
healthy baked Turkey Kielbasa and Veggies
Just use whatever veggies you have on hand. I used about 6 small red potatoes, several cups of coarsely chopped broccoli, red pepper, zucchini and kielbasa cut in large rounds. I put the veggies in a Ziploc bag and tossed with olive oil, my personal favorite brand is Lawry's garlic salt and red pepper flakes. Toss it all together and bake at 400 Degrees on a tin-foil lined baking sheet and cook for about 25 minutes stirring half way through.
Sprinkle with freshly grated Parmesan, salt and pepper to taste and serve over rice or quinoa. So easy and yummy! Also good with mushrooms, onions, carrots, or any other veggie you have taking up space in your fridge.
