Sunday Supper Series: Chicken Avocado Lime Soup

I am a sucker for anything that involves lime, cilantro and avocado.  ANYTHING.  I follow cookingclassy on Instagram and pinterest and her feeds never disappoint.  This recipe is delicious even as leftovers the next day--with a freshly sliced avocado!  I do not do two jalapenos b/c it is just too spicy for us, but I ALWAYS seed my jalapenos.  Nothing ruins a great meal like blowing your brains out with too much heat!

Sunday Supper Series: Instant Pot Smoky Honey Cilantro Chicken

With four kids who are ALWAYS hungry, dinner time is not my favorite.  There are few things that send me over the edge more than after a crazy day of work, carpooling, laundry and cleaning to have my kids say "What is for dinner?" when I am not well prepared for it.  I am hit or miss on the weekdays (I mean, we always eat...but some days it is grilled cheese or fried egg sandwiches), but Sunday I actually love cooking a nice, well-rounded meal.  It might be the only day I actually sort of enjoy cooking.  Maybe it is the slower pace of Sunday, or maybe it is because going to church puts me in a more generous mood.
